Starting out as a trail in the cellar, Adrestia turned out of be a wine of texture and balance that fully merited the introduction of a white wine into The Flagship Series. Reserved aromatics of melon, pear, cinnamon, damp cedar, rose water and nectarine. The palate is very light on its feet, a nice entry and mouthfeel that shows very energetic and mouth-watering fruit. This has a Bickford’s lime cordial edge, that stays focused and vibrant. The secret to this wine is always the sneaky acid profile; the fruit sits around but the main act is the clean, fresh, reverberating chalky and textured acid profile. This wine shows a leanness that is reminiscent of our original bottling in 2012. This will age very well for a very long time.
