Baudry's delicate, crunchy Chinon rosé is made from 100% Cabernet Franc, Chinon AOC fruit and comes from vines rooted in the gravel terroir of Grézeaux as well as a rented parcel called Les Balais, originally planted by Matthieu's father some 30 years ago. In contrast to Grézeaux, Les Balais is on clay/flintstone (silex) and Baudry suggests the vibrant freshness you can taste in this wine is thanks to Les Balais' silex terroir and mature vines. Picked by hand, there is a brief skin contact and then the wine ferments via indigenous yeasts, two thirds in the Domaine's concrete tanks and the remainder in stainless steel. The perfume is all about cherry-blossom and the palate is fine, silky textured, jubey, floral and bone dry. The finesse and freshness on offer creates a terrific alternative to the more full-bodied rosé wines out there.
