​Certified organic grapes grown at 300m asl just out of Healesville. We’re getting pretty high and the view is good too. Soils are marine derived sandstone, with siltstone and shale. Soils are similar respected vineyards in Gruyere which within the Warramate anticline.
After being handpicked, the grapes were wholebunch fermented (wild) for 7 days and pressed to a season puncheon for a wild malolactic fermentation. The wine had a few careful lees stirs to build texture and mitigate reduction. No additions (including no sulphur dioxide) were made, no filtration was conducted and the wine was made without any ‘modern’ technological inputs.
